Irish Potato Cakes

Whether you call it a hashbrown (North America), tattie scone (Scotland) or potato cake (Ireland), they are all a similar version of a fried potato patty.

This is a great recipe to use when you have a bunch of leftover mashed potatoes. Pick you favorite dry or fresh herbs, and add to the recipe to flavor them however you like.

Irish Potato Cakes

Use up your leftover mashed potatoes to make this traditional Irish side dish.

Ingredients
  

  • 3 cups prepared mashed potatoes
  • 1/3 cup GF flour blend* divided
  • 1 tsp onion powder
  • 1-2 Tbsp fresh herbs chopped
  • Salt and pepper to taste

Instructions
 

  • If using leftover prepared mashed potatoes, allow to come to room temperature (makes combining easier). If making fresh potatoes, add some milk and butter and whip until soft, but not runny.
  • Using your hands or a potato masher, combine together the mashed potatoes, 1/4 cup of the flour, and the seasonings. Taste and adjust seasonings as necessary. Take some mixture and shape into a ball, then flatten into a 3 inch patty (or make them whatever size you like), then lightly pat some flour onto each side.
  • Melt some butter into a skillet and fry patties on each side until golden, about 3-4 minutes per side. Serve hot.

Notes

Flour blend suggestion: 1/3 cup potato flour + 1/4 tsp xanthan gum
