This is an easy meal to make ahead of time – Place meatballs (not touching) on a baking sheet and freeze them. Once frozen, place in a large bag. Combine the sauce and freeze in another bag. To prepare, defrost everything then  follow recipe below.

Honey Garlic Meatballs

Ingredients
  

Meatballs

  • 2 lbs ground beef
  • 1 egg
  • ½ onion finely chopped (sauté ahead of time if you like, or add in raw)
  • 2 cloves garlic minced
  • 2 1/2 tsp GF soy sauce
  • 1 tsp GF Worcestershire sauce
  • ½ tsp pepper
  • 1 tsp mustard powder
  • ½ tsp paprika
  • ¼ tsp ground ginger
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ¼ tsp red pepper flakes
  • ¼ cup grated Parmesan cheese optional
  • ¼ cup GF breadcrumbs or 3 Tbsp almond flour

Sauce

  • 1/2 cup GF soy sauce
  • 1/3 cup honey
  • 5 Tbsp ketchup
  • 1 tsp sesame oil
  • 2 1/2 tsp rice vinegar
  • 1/2 tsp ground ginger
  • 1/2 tsp red pepper flakes
  • 4 garlic cloves minced
  • 1/4 tsp black pepper
  • 2 tsp sugar
  • 1 Tbsp cornstarch
  • 1 Tbsp cold water
  • 1 Tbsp sesame seeds garnish
  • 1 bunch green onions chopped (garnish)

Instructions
 

  • For meatballs, in a large bowl lightly whisk egg then add in onion and ground beef, mixing gently. In a small dish add remaining ingredients, stirring well, then add to beef mixture, use hands to ensure everything is evenly incorporated. Shape into meatballs (I used my smallest cookie scoop), then place on a lined baking sheet. Bake at 400°F for 20 minutes.
  • For sauce, combine all ingredients in a dish. Place meatballs into 4-quart Dutch oven, then pour over sauce. Cover and simmer for 30 minutes. Just before serving, combine water and cornstarch in a dish then stir into pot to thicken the sauce.
  • Serve with rice and garnish with sesame seeds and green onions if desired.
