Citrus-Date Vinaigrette

Using freshly squeezed citrus juices really does provide a superior flavor over bottled/juice concentrate.
  • 2 dates, pitted (rehydrate if dried)
  • ¼ cup olive oil
  • ½ tsp orange zest
  • ½ tsp lemon zest
  • 3 Tbsp fresh lemon juice
  • 2 Tbsp fresh orange juice
  • 1 Tbsp whole grain Dijon
  • Salt and pepper to taste
  1. In a blender or mini food processor, combine all ingredients until smooth.
Blend with water if needed for a thinner consistency.
