Orange & Ginger Beef Stew (Slow Cooker)

Ingredients
  • 900g boneless pot roast, chopped into 1” cubes
  • 1 onion, chopped
  • 2 Tbsp fresh ginger, minced
  • 2 Tbsp orange marmalade
  • 2 Tbsp GF soy sacue
  • 1 Tbsp brown sugar
  • 1 tsp five-spice powder
  • 1 Tbsp orange zest
  • 2 cloves, minced
  • ¾ tsp salt
  • ½ tsp pepper
  • 1 cup GF beef broth
  • ½ cup orange jucie
To Finish
  • 2 Tbsp cornsrtarch
  • 2 Tbsp cold water
  • 4 cups baby bok choy, quartered
  • 3 green onions, sliced
  • ¼ cup fresh parsley, chopped
Instructions
  1. Add roast to slow cooker. Combine remaining ingredients and stir until well mixed then pour over roast.
  2. Cook high for 4-6 hours, or low for 8 hours.
  3. Whisk together cornstarch and water in a small dish and mix into slow cooker. Turn to high, add veggies, cover and cook another 10 minutes until veggies are tender crisp.
  4. Serve over steamed rice and garnish with fresh parsley.
