Homemade Crispy Chow Mein Noodles

Light, crispy, fried noodles. Perfect for topping over a salad.
Ingredients
  • 3 eggs beaten
  • ½ cup potato starch
  • ½ cup tapioca flour
  • ½ cup cornstarch
  • 2 tbsp water
  • 1 tbsp vinegar
  • 1½ tbsp xanthan gum
  • 1½ tbsp oil
  • 1½ tsp baking powder
  • 1 tsp salt
Instructions
  1. Thoroughly mix all dry ingredients, then add in eggs, water, vinegar and oil.
  2. Knead for several minutes, then roll out as thin as possible and cut into 2 inch strips.
  3. Keep frying with hot oil until lightly browned. Place on a paper towel to let it drain and soak.
  4. After this has cooled completely, keep it in the freezer until ready to use.
