Plum Cake

Use your favorite fruit to top this moist cake.
Ingredients
Dry Ingredients:
  • ¼ cup bean flour
  • ¼ cup rice flour
  • ½ cup arrowroot
  • ½ cup potato starch
  • ½ cup rice bran
  • ½ tsp xanthan gum
  • 2 tsp baking powder
  • ¼ tsp salt
  • 2 Tbsp butter or margarine
Wet Ingredients:
  • 1 egg
  • ½ tsp vanilla
  • 2 Tbsp milk or water
Fruit Topping:
  • 2-3 plums or peaches, sliced
  • 2 Tbsp sugar + 1 tsp cinnamon
  • 2 Tbsp butter or margarine
Instructions
  1. Combine all dry ingredients with butter, until crumbly.
  2. Beat in remaining wet ingredients, then pour into a greased cake pan.
  3. Top with a thick layer of sliced fruit, and sprinkle with cinnamon and sugar.
  4. Dot the top with bits of butter and bake at 425°F for 25 minutes.
