Coconut Nests

A fun Easter treat you can make with your kids.
  • 2 egg whites
  • 2 cups sweetened shredded coconut
  • ⅓ cup sugar
  • 2 Tbsp cornstarch
  • ½ tsp vanilla
  • ⅛ tsp salt
  1. Beat eggs until soft peaks form. Stir in remaining ingredients and mix until well blended.
  2. Using your hands, get about 3 Tbsp of the mixture and shape into a ball, then drop onto a parchment lined baking sheet. Use a spoon to make a well in the center.
  3. Bake at 325°F for 20-25 minutes or until slightly golden brown. Cool 10 minutes then remove onto cooling rack.
