Sugar Free Cashew Cream Frosting

A smooth creamy frosting that is perfect for those on a sugar-reduced diet.
  • 1 cup raw cashews
  • 6 dates, pitted
  • 1 Tbsp lemon juice
  • 7-15 drops or 1 tsp powdered stevia, or more to taste
  • 400ml can coconut milk (premium or light)*
  1. In a large bowl add cashews and dates along with enough water to cover them. Allow to sit for one hour.
  2. Drain off water and add cashews and dates into a blender. Add lemon juice, sweetener, and half of the coconut milk.
  3. Process on high, stopping to scrape sides down. Add more coconut milk until mixture is smooth and creamy (like the consistency of mayonnaise).
  4. Pour into a container and refrigerate for an hour to firm up.
  5. Use as desired on cakes or cupcakes, or as a dip for fruit slices.
*If using a Vitamix machine, you probably will only need to use about ¼ of the coconut milk. Use just enough until mixture is smooth.
