Quinoa & Mushroom Sauté

Mushrooms and thyme add a wonderful flavor to the quinoa, turning this into a wonderful savory side dish you are sure to enjoy.
  • 1 cup quinoa
  • 1 Tbsp olive oil
  • 1 lb mushrooms, thinly sliced
  • 2-3 cloves garlic, minced
  • ½ tsp dried thyme
  • 1-2 tsp GF balsamic vinegar
  • Salt and pepper to taste
  • 2 Tbsp Parmesan, grated (optional)
  1. Cook quinoa according to package directions, set aside.
  2. In a large skillet heat oil and sauté mushrooms until golden. Add in garlic, thyme, and balsamic vinegar. Stirring until garlic is fragrant.
  3. Add in cooked (and drained) quinoa, stirring until well combined. Season to taste with salt and pepper.
  4. Garnish with cheese if desired.
