Banana Cake

Fresh strawberries and nuts go well with this easy banana cake.
Ingredients
  • 7 eggs, separated
  • 1 cup sugar
  • 1 cup potato starch
  • 2-3 bananas, mashed
  • 1 cup walnuts, ground
Instructions
  1. Beat whites until stiff and set aside.
  2. In separate bowl, beat yolks and sugar together. Add potato starch slowly, beating to a smooth consistency. Add mashed bananas and groundnuts, then gently fold mixture into whites.
  3. Grease bottom but not sides of tube pan, and pour batter in, then bake at 350F for 45 minutes.
  4. Turn pan upside down and let cool.
