Mango, Tomato & Avocado Salad

Mango gives this salad a bit of sweetness that balances the sharp flavor of the vinaigrette and onions perfectly.
  • 1 mango, cut into cubes
  • 1 tomato, cut into cubes
  • ⅓ cup red onion, thinly sliced
  • ½ avocado, cut into cubes
  • Boston Bib or Butter Lettuce leaves
  • 2 Tbsp fresh cilantro, chopped
  • 2 Tbsp olive oil
  • 1 Tbsp white wine vinegar
  • 1 Tbsp lemon juice
  • 1 clove garlic, minced
  • ¼ tsp salt
  • ⅛ tsp pepper
  1. Whisk together the dressing ingredients together and set aside.
  2. In large bowl add mango, tomato and onions, then pour dressing over it. Cover and refrigerate for 1-4 hours.
  3. Just before serving, stir in avocado and divide into four portions and serve on a bed of lettuce.
