Oatmeal-Coconut Breakfast Bake

My favorite thing about this recipe is you can wrap it and take it with you, and its great warm or cold.
Ingredients
  • 3½ cups GF oats or quick oats (not instant)
  • 2 tsp baking powder
  • 1 tsp salt
  • ½ tsp cinnamon
  • ½ cup brown sugar
  • ½ cup coconut
  • ½ cup raisins
  • ¼ cup oil
  • 2 eggs
  • 1 cup milk or milk alternative
Instructions
  1. Mix ingredients in order given and pour into greased 8x8 pan, and bake at 350°F for about 30 minutes.
  2. Serve warm with milk and brown sugar, and fresh in season berries.
