Pineapple Breakfast Bake

A winning recipe for breakfast!
Ingredients
  • 4 eggs
  • 1 tsp vanilla
  • 5 ounces GF bread (broken into pieces)
  • ⅓ cup sugar
  • 1 tsp cinnamon
  • 20 ounce can crushed pineapple (reserve ½ cup juice)
  • 1 tsp baking soda
Instructions
  1. In a processor, mix all the ingredients together and blend.
  2. Pour into a lightly greased 8x8 baking pan and sprinkle some cinnamon on top.
  3. Bake at 350°F for 45 minutes and lightly brown.
