Blueberry Pancakes

Cottage cheese gives this recipe a light sour taste to complimate the blueberries.
  • 4 eggs
  • 1½ cups cottage cheese
  • 1 cup blueberries
  • ½ cup potato starch
  • ¼ cup sugar
  • 1 tsp vanilla
  1. Blend cottage cheese, eggs, potato starch, sugar and vanilla into food processor.
  2. Fold in the blueberries, then drop onto a lightly greased griddle.
