Belgian Waffles

A light and airy classic waffle.
Ingredients
  • 1½ cup rice flour
  • 1 cup potato starch
  • ½ cup bean flour
  • 3 Tbsp sugar
  • 2 Tbsp baking powder
  • 1 tsp salt
  • 4 eggs, separated
  • ¼ cup oil
  • 2 cups milk
  • 2 tsp vanilla
Instructions
  1. Mix rice flour, potato starch, bean flour, sugar, salt and baking powder.
  2. Combine beaten egg yolks with oil, milk and vanilla in a separate bowl.
  3. Add the two mixes together and blend thoroughly.
  4. In a different bowl, beat the egg whites until you see stiff peaks form.
  5. Fold the egg whites into batter. Scoop into a hot waffle maker.
