Cucumber Snackwich

Quick and easy to make, perfect for kids lunches.
Ingredients
  • English cucumber
  • GF plain or flavored cream cheese
  • GF deli meat
  • Salt and pepper
Instructions
  1. Slice cucumber in half lengthwise, and scoop out seeds. Sprinkle with salt and turn upside down onto a paper towel (to remove excess moisture). Let sit for 5 minutes, then wipe dry with paper towel.
  2. Spread cream cheese into one half, fold deli meat into the other half, then combine together with some toothpicks to secure. Cut into 3-4 inch ‘sandwiches’.
