Mango Mint Prawns

Great on the grill!
  • 1 kg (2 lb) prawns, peeled & de-veined
  • 3 mangoes
  • 2¾ cups apricot juice
  • 1½ Tbsp fresh mint, chopped
  1. In a food processor, blend the mangoes, juice and mint.
  2. Pour into a microwave-safe dish and microwave on HIGH for three minutes.
  3. Grill prawns, then serve with mango dip.
