Coconut & Chocolate Chip Blondies

Coconut & Chocolate Chip Blondies

Ingredients
  

  • ½ cup pitted dates
  • ½ cup coconut flour
  • ¼ cup GFC Flour Blend for Baking
  • ½ tsp baking soda
  • ½ tsp xanthan gum
  • ¼ tsp salt
  • ½ cup coconut oil melted
  • 2 eggs
  • ¼ cup + 2 Tbsp honey
  • 1 tsp vanilla
  • 1 cup semi-sweet chocolate chips

Instructions
 

  • Soften dates in a bowl with very warm water, about 20 minutes. Drain.
  • Whisk together the flours, baking soda, xanthan gum and salt. Set aside.
  • In a food processor add soaked dates, oil, eggs, honey and vanilla. Process until smooth. Add the flour mixture and pulse until combined.
  • Scrape mixture into a bowl and stir in chocolate chips. Spread batter into a greased 8x8" baking pan and bake at 350°F for 30 minutes.
  • Allow to cool completely before cutting.

  1. This is my favorite flour blend for baking, just replace the cornstarch with tapioca flour/starch. For most recipes that call for cornstarch you can replace it with tapioca or arrowroot starch (just don’t use arrowroot with dairy-the mixtures becomes slimy). Replace the xanthan gum with guar gum, or omit it completely.

  2. In addition to sweetness, the dates are adding fiber and therefor a thickness to the squares. Because sugar is actually classified as a liquid in recipes (since it melts), you may need to add more flour to thicken the batter (to a brownie-like consistency). Let me know how it turns out if you try it!

  3. Sorry. Having computer problems. Locks up and hard to know when things will get moving again. I believe I was reregistering. My daughter-i n-law must be very careful. The problem started a few years after her 2 children were born.
    This is a wonderful site, I have helped my grandchildren surprise their MOM with special desserts.

  4. Yes, just add more of the other flour blend. As for the oil, I would add only 1/4 cup of another type or 1/2 cup of butter or margarine. Coconut oil becomes firm at room temp, so I would worry that once the squares are baked that if you added a full 1/2 of vegetable oil, that the consistency may be quite a bit different. Let me know how it turns out!

  5. Since we’re not too concerned with rising in this type of brownie recipe, xanthan gums main function is to mimic gluten in terms of improving the baked goods texture. Yes you can omit it, but its best if you use something else in its place. Check out Substitutes for Xanthan & Guar Gum for more info on what you can use (chia seeds are my favorite).
