Chocolate Covered Coconut Bon Bons

Such a simple yet classy treat your guests will have a hard time believing you made them.

Ingredients
  

  • 1/4 cup butter or margarine
  • 1 lb icing sugar
  • 1 cup sweetened condensed milk
  • 2 cups flaked coconut

Glaze:

  • 9 oz GF semi-sweet chocolate
  • 2 Tbsp shortening

Instructions
 

  • Mix together butter, icing sugar, and sweetened condensed milk until smooth, then stir in the coconut.
  • Roll dough into 1 inch balls, and refrigerate until set, about 1 hour.
  • Melt chocolate and shortening over a double boiler, stirring occasionally until smooth. Remove from heat when melted and stir to make sure the shortening is fully incorporated.
  • Use toothpicks to hold the balls while dipping in the chocolate, then place on parchment paper to set.
