Chicken with Cherry Tomatoes in White Wine Reduction

With a light butter and wine sauce, the tomatoes are allowed to shine in this simple yet tasty dish.

Ingredients
  

  • 4 boneless chicken breasts sliced in half horizontally (to speed pan frying)
  • Salt and pepper
  • 3 Tbsp olive oil
  • 1 cup dry white wine
  • 1 1/2 cups cherry tomatoes whole
  • 4 cloves garlic sliced
  • 2 Tbsp butter or margarine cold

Instructions
 

  • Season chicken with salt and pepper and fry in a hot skillet with oil. Fry about 5 minutes per side, or until fully cooked. Remove to a plate to keep warm and set aside.
  • Add wine, garlic and tomatoes to skillet and simmer over medium-high heat until wine is reduced by half and tomatoes start to split, about 10 minutes.
  • Remove from heat and whisk in butter. To make a thicker sauce, pour in a cornstarch mixture (1 tsp cornstarch + 1 tsp cold water) while sauce is simmering. Whisk until thick. Pour sauce over chicken and serve.

  1. I agree nothing tastes better than butter, but for those who follow a dairy-free diet that is their next best substitute.

  2. Being dairy casein sensitive I use Ghee from purity farms in place of butter. It has fantastic properties: salt free, no GMO’s, lactose and casein free, Kosher, no transfatty acids and 0mg/serving Oxidized Cholesterol. More expensive than butter or margarine by quite a bit, but for special recipes well worth it. Thanks for the tip on chilling the butter: now all I have to do is the shopping for the ingredients.   3. What about other recipes? When I clicked on “Chicken” this and one other one came up. I know there are more recipes that you can provide me with. What about Crock Pot Recipes??? Do you have any easy crock pot recipes for me. I had surgery on my right hand (dominant hand) and cannot cut and chop things so it is VERY difficult to prepare meals – especially dinners. Can you supply me with any EASY gluten free recipes to prepare for “disabled” individuals?
