Carrot cake with cinnamon and ginger.

Ingredients
  

Wet Ingredients:

  • 2 cups carrots grated
  • 2 eggs
  • 1/2 cup honey
  • 1 1/2 cups apple juice
  • 2 Tbsp butter or margarine

Dry Ingredients:

  • 2 cups GF flour mix
  • 1 tsp ginger
  • 1/2 tsp cloves
  • 1 tsp cinnamon
  • 1 tsp baking soda
  • 1 cup walnuts chopped
  • 1 cup raisins

Instructions
 

  • Place carrots, honey, butter and apple juice concentrate in heavy saucepan, bring to a boil and cook over low heat for ten minutes. Allow to cool to lukewarm, then mix in eggs.
  • Mix together dry ingredients. Then add in apple juice mixture. Mix until combined.
  • Pour into 2 small well-greased loaf pans and bake at 300°F for 45 minutes.

Notes

Cream Cheese Frosting: 8 oz cream cheese 1 lb icing sugar 1 tsp lemon extract
