Carrot cake with cinnamon and ginger.
Ingredients
Wet Ingredients:
  • 2 cups carrots, grated
  • 2 eggs
  • ½ cup honey
  • 1½ cups apple juice
  • 2 Tbsp butter or margarine
Dry Ingredients:
  • 2 cups GF flour mix
  • 1 tsp ginger
  • ½ tsp cloves
  • 1 tsp cinnamon
  • 1 tsp baking soda
  • 1 cup walnuts, chopped
  • 1 cup raisins
Instructions
  1. Place carrots, honey, butter and apple juice concentrate in heavy saucepan, bring to a boil and cook over low heat for ten minutes. Allow to cool to lukewarm, then mix in eggs.
  2. Mix together dry ingredients. Then add in apple juice mixture. Mix until combined.
  3. Pour into 2 small well-greased loaf pans and bake at 300°F for 45 minutes.
Notes
Cream Cheese Frosting: 8 oz cream cheese 1 lb icing sugar 1 tsp lemon extract
