Carrot Cake
Carrot cake with cinnamon and ginger.
Ingredients
Wet Ingredients:
- 2 cups carrots grated
- 2 eggs
- 1/2 cup honey
- 1 1/2 cups apple juice
- 2 Tbsp butter or margarine
Dry Ingredients:
- 2 cups GF flour mix
- 1 tsp ginger
- 1/2 tsp cloves
- 1 tsp cinnamon
- 1 tsp baking soda
- 1 cup walnuts chopped
- 1 cup raisins
Instructions
- Place carrots, honey, butter and apple juice concentrate in heavy saucepan, bring to a boil and cook over low heat for ten minutes. Allow to cool to lukewarm, then mix in eggs.
- Mix together dry ingredients. Then add in apple juice mixture. Mix until combined.
- Pour into 2 small well-greased loaf pans and bake at 300°F for 45 minutes.
Notes
Cream Cheese Frosting: 8 oz cream cheese 1 lb icing sugar 1 tsp lemon extract
