Buttermilk Scones

Ingredients
  

  • 1 cup rice flour
  • 1 cup buttermilk
  • 3/4 cup cornstarch
  • 1/2 cup potato starch
  • 1/4 cup tapioca flour
  • 2 Tbsp bean flour
  • 2 1/2 tsp xanthan gum
  • 2 1/2 tsp baking powder
  • 1 1/2 Tbsp sugar
  • 1/4 cup butter or margarine cold
  • 1/2 tsp salt
  • 1/4 cup nuts finely chopped
  • 1/2 cup raisins

Instructions
 

  • Thoroughly mix the first nine dry ingredients into a large bowl.
  • Combine the rest of the ingredients and blend well.
  • Form gently into scones shapes then place on a lightly greased baking sheet.
  • Bake at 400°F for 20 minutes, or until lightly browned.
