Bread machines have a variety of features and settings, but the most important is to ensure it has is a Gluten Free Cycle or one with a User Programmable setting.
The ‘Gluten Free’ setting has only has one rise – no punching down, or second rise. It is hard enough to get a good rise from a gluten-free bread dough, so any height you get will be lost if the dough gets punched down and is expected to rise a second time.
Machines with dual kneading blades are able to knead the dough more thoroughly leaving you with a better texture, however those with single blades work just as well.
