Black Bean Soup

Bacon and chipotle add a rich smoky flavor and bit of heat to this great tasting soup.

Fry bacon until crisp, set aside. In a large stock pot, fry onions and carrot in oil until soft. Add garlic and spices, frying for another 30 seconds.

Add tomatoes, corn, beans, broth and 2/3 of the cooked bacon (save rest for garnish). Bring to a boil then reduce heat and simmer for 30 minutes. Use an immersion blender, or run soup through a food processor until smooth. Return to pot and continue to simmer until soup is reduced and has reached your desired consistency.

Ingredients
  

  • 3 slices GF bacon chopped
  • 2 Tbsp olive oil
  • 1 onion chopped
  • 1 carrot grated
  • 1 clove garlic minced
  • 1/2 tsp cumin
  • 1/4 tsp chili or chipotle powder
  • 1 can 540ml diced tomatoes
  • 1/3 cup corn
  • 1 15oz can black beans, rinsed
  • 2 cups GF chicken broth
  • 1/4 cup fresh cilantro chopped
  • Salt and pepper

Garnishes

  • Sour Cream optional
  • Bacon Bits
  • Black Beans
  • Corn
  • Cilantro

Instructions
 

  • Fry bacon until crisp, set aside.
  • In a large stock pot, fry onions and carrot in oil until soft. Add garlic and spices, frying for another 30 seconds.
  • Add tomatoes, corn, beans, broth and 2/3 of the cooked bacon (save rest for garnish). Bring to a boil then reduce heat and simmer for 30 minutes.
  • Use an immersion blender, or run soup through a food processor until smooth. Return to pot and continue to simmer until soup is reduced and has reached your desired consistency.
  • Season to taste with salt and pepper and add cilantro. Divide into bowls, and top with any garnishes you like.

Notes

For a vegetarian version, omit bacon and replace chicken stock with vegetable stock.

    one thing that I have to mention is about some ingredients names, I have never come across the names :
    chipotle and cilantro, what are these in plane English ?
    Some short cuts eg GF bacon, what is this bacon ?

  2. Great questions! GF is short for gluten free. Using the abbreviation helps to keep the recipe text a bit more simple, and not so wordy.
    Chipotle is a type of Mexican pepper that is sold in cans with a spicy adobe sauce. It has a deep smoky, spicy flavor. If you don’t have any, you could always replace it with some chili powder.
    Cilantro is a fresh herb which is used a lot in Mexican or Southwest style cooking. If you don’t like the taste of it, you can always replace it with parsley.

  3. chipotle is basically a jalapeno pepper that is dried, sometimes smoked, I crush it up before adding it to anything – nice warming taste, if you find it too hot, eat a piece of bread or cheese to take the heat off:)

    cilantro is herb that is used in a lot of Mexican recipes, personally, it tastes ‘soapy’ so I just leave it out or substitute chopped parsley

    GF bacon – this is a recent addition to the grocery shelves, in Canada, here it is a sort of dried substitute for real bacon, and, it is also found in the kosher section/shops – pretend bacon – my preference is to use the real thing.
