Asian Lettuce Wraps
Ingredients
Sauce
- 3/4 cup GF hoisin sauce
- 1 1/2 tsp rice vinegar
- 1 Tbsp honey
- 3 tsp GF sweet chili sauce
- 1 Tbsp lime juice
- 2 tsp sesame oil
- 1 clove garlic minced
- 1 tsp ginger grated
Filling
- 2 Tbsp oil
- 1 1/2 lbs ground pork or turkey
- 1 clove garlic minced
- 2 Tbsp GF soy sauce
- 1 tsp brown sugar
- 1 red pepper finely chopped
- 1/2 onion finely chopped
- 1 cup water chestnuts finely chopped
- 1 cup mushrooms finely chopped
- 2 tsp sesame oil
Toppings
- Handful cilantro stems
- 3 green onions sliced
- 1 head iceberg butter, or Boston lettuce, separated into whole leaves
- 1/2 cup peanuts or cashews chopped
Instructions
- To make the sauce; in a saucepan over medium heat, combine all the ingredients. Stir and heat until well blended, then turn down to low and let simmer until meat mixture is ready.
- To make filling; cook ground meat until fully cooked (drain off any fat if necessary). Add remaining ingredients, and cook until heated throughout (or until veggies are cooked to your likeness). Stir in 1/2-3/4 of the sauce (reserve some for serving), and place into a serving bowl.
- To serve; set out individual bowls of reserved sauce, filling mixture, and toppings.
- To eat; take a lettuce leaf, fill with a few tablespoons of filling, add any toppings and extra sauce you'd like, then gently fold lettuce leaf around burrito-style.
- *If you can't find a GF hoisin sauce, a GF teriyaki sauce can be substituted.
