Fruity Chia Parfait

Chia  seeds are packed with healthy omega-3 fatty acids, and when paired with fresh fruit are a great (and delicious!) way to start your morning.

Of all the non-dairy milks, almond milk has the thickest consistency and will make the thickest mixture when combined with the chia seeds. If you choose to use rice or coconut milk, add a bit more chia seeds (after it initially sets) until you get the thickness you want.ChiaParfait2

Allow to thicken at least 2 hours, or overnight. Then layer with fresh fruit in a tall glass. Drizzle a bit more syrup over the fruit topping if you like.ChiaParfait3

Ingredients
  

  • 3 Tbsp chia seeds
  • 1 cup regular or almond milk
  • 1-3 tsp maple syrup or agave to taste
  • 1/2 tsp vanilla

Topping Suggestions

  • Strawberries
  • Blueberries
  • Raspberries
  • Mango
  • Toasted Coconut

Instructions
 

  • Whisk together all the ingredients in a bowl. Cover and refrigerate for at least 2 hours to thicken (or overnight).
  • To serve, layer with toppings of your choice and a drizzle of maple syrup if desired.

Notes

If using non-dairy milk, almond milk is the best as it has a thicker consistency. If you choose to use rice or coconut milk, you may need to add a bit more chia seeds to thicken the mixture.
