Citrus-Date Vinaigrette

This simple dressing is an amazing combination of flavors, and pairs perfectly when drizzled over peppery-flavored baby arugula.

Remove the pits from the dates and puree everything in the blender until smooth.

Most dressings require the oil to be slowly drizzled in while the machine is running to combine the oil and vinegar. But here, the dates and Dijon add enough bulk to the mixture that you can process everything all at once and you’ll still achieve the proper emulsion.

Using freshly squeezed citrus juices really does provide a superior flavor over bottled/juice concentrate.

Servings 2 /3 cup

Ingredients
  

  • 2 dates pitted (rehydrate if dried)
  • ¼ cup olive oil
  • ½ tsp orange zest
  • ½ tsp lemon zest
  • 3 Tbsp fresh lemon juice
  • 2 Tbsp fresh orange juice
  • 1 Tbsp whole grain Dijon
  • Salt and pepper to taste

Instructions
 

  • In a blender or mini food processor, combine all ingredients until smooth.

Notes

Blend with water if needed for a thinner consistency.

  1. It makes 2/3 cup, and like most homemade dressing it will last a few days in the fridge. Hope you like it!
